Grilled Pesto Panini Sandwiches

Fire up the grill for these simple and delicious Grilled Pesto Panini Sandwiches. They are easy to prepare and come together in a matter of minutes.  Serve up a big platter of these for your next backyard party. Your guests will love them!



Grilled Pesto Panini Sandwiches

Ingredients:
8 slices round Italian bread
4 tablespoons soft butter
4 slices mozzarella
4 slices provolone
8 tablespoons prepared pesto

Directions:
1. Preheat your gas or charcoal grill.

2. Butter the outside of each bread slice.

3. Spread the inside of each bread slice with 1 tablespoon pesto. Fill each sandwich with 1 slice of mozzarella and one slice of provolone.

4. Grill the sandwiches for about 1-2 minutes per side. Check the bread to make sure it is not burning. Flip and continue cooking until the other side is golden brown.

For a more traditional 'flattened' panini, you may take a brick and cover it with foil to place on top of the sandwich. Or, you may use a heavy cast iron pan. Use caution, the cast iron skillet and brick will be very hot.



Makes 4 sandwiches.
