Brown Bag Baked Dutch Apple Pie

A friend of mine makes an annual stop up to Wisconsin and always came home with an apple pie baked in a brown bag. I can't really explain why an apple pie baked in a brown bag tastes so good, but it does.  The brown bag seems to cook the pie perfectly without the pie over browning.


Brown Bag Baked Dutch Apple Pie

Ingredients:
1 pie crust (my no roll pie crust can be found here)
6 cups peeled and sliced apples (I like a mixture of granny smith and macintosh.)
1/2 cup white sugar
1/4 cup brown sugar
3 tablespoons four
1 tablespoon lemon juice
1/2 tablespoon butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
a pinch of salt

Topping:
1/2 cup flour
1/4 cup white sugar
1/4 cup brown sugar
pinch of salt
1/2 cup cold butter

Directions:
1. Preheat your oven to 375 degrees F. Shape the crust into the pie plate.

2. In a large bowl, toss together the apples, lemon juice, flour, sugars, cinnamon, nutmeg and salt.  Pour into the crust.  Cut the 1/2 tablespoon of butter into small pieces and dot over the top of the apples.

3. With a pastry knife or a food processor (short pulses in a food processor), cut the butter into the topping ingredients until the butter is about the size of small peas. Carefully top this over the apples.

4. Place the apple pie in a brown bag, rolling up the bottom and stapling shut. Place it on a cookie sheet pan and bake for 1 hour.


5.  Allow it to cool in the bag then tear open. Serve warm or cold.

  3. I must admit, I don't think I've ever heard of baking a pie in a paper bag! It must not be a Southern thing (I was born and raised in Tennessee) :-P But it looks delicious!

  7. I have been baking a Thanksgiving apple pie in a bag for about 30 years now. Take the pie out of the bag for the last 10 minutes so that the top browns up. I find that this method of baking creates a super juicy and tender pie!

  8. If using your pie crust recipe, does the crust have to be pre-baked before adding the apple pie filling?
