Oatmeal Pancakes

Oatmeal never tasted so good......


I have made these pancakes successfully with both old-fashioned rolled oats and steel cut oats.  The steel cut oats keep their shape and add a bit of texture to the pancakes.  My husband and I like the texture of the steel cut oats, but our three kids prefer the basic old fashioned oats.

Ingredients:
2 cup old-fashioned oats
2 cup buttermilk
2 eggs, lightly beaten
2 tablespoons oil or melted butter
1/2 cup flour (white or whole wheat)
2 tablespoons brown sugar
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt

*For best results, you must start these pancakes the day before.

Directions:
1. Start by soaking the oats in the buttermilk.  Cover with plastic wrap and chill overnight.

2. The next morning, stir the dry ingredients together and set aside.  To the oat/buttermilk mixture- add the beaten eggs, oil, brown sugar, and vanilla.

3. Stir in the dry ingredients.

4. Cook pancakes on a preheated greased griddle until done on both sides.

5. Serve with butter and homemade pancake syrup.

  1. I made it almost the same, just added some blueberries. Have to say that pancakes with oats really taste good

  3. So just wait for the season :) Its really worth trying, Im thinking to try such pancakes with other berries or maybe raisins

  4. When blueberries are in season, I always stock up at the Farmer's Market and then freeze a bunch of them - they are great to add to things like this year round. I will have to get some buttermilk and give these a try. I wonder if I could add some pumpkin to them as well.... They sound awesome!
