Caramel Apple Pancake

Santa delivered.

There was cast iron under the tree this year.

(yay!)

I got my new massive 12 inch-er seasoned last night and ready for use this morning.

I had to break my new baby in with a caramel apple pancake.

Daddy D is headed into the office tomorrow so this will be the last morning of an indulgent, homemade breakfast.

Tomorrow. ...cold cereal.  (Granted my cereals are homemade.)


Caramel Apple Pancake:

4 tablespoons unsalted butter (or be really indulgent and use 7 tablespoons)
1/4-1/2 cups sugar
1 teaspoon cinnamon (optional)
2 very large ripe (light in color and slightly yellow) Granny Smith apples
3 large eggs
3/4 cup flour (I used a mix of white, whole wheat and ground flax seed)
3/4 cup milk
1/4 teaspoon salt
1/4 teaspoon vanilla

Preheat oven to 450 degrees F.

Peel, core, and slice the apple.



Place the flour, milk, salt, vanilla, and eggs in a blender or food processor.


Mix.


Meanwhile, heat your cast iron.  (I used my 12 inch but a 10 inch should work fine too.)  Melt the butter, swirling up around the sides of the pan.

Add the sugar and stir until dissolved.

Next, add the apples and cook for about 5 minutes, until the apples start to soften.


Pour the batter over the apples and bake for 15-17 minutes.



Serve immediately.

  1. I dont think you even need to say 'serve immediately' :)) it would be eaten as fast as it comes from the oven :)) sounds really great, I can imagine that smell of caramelized apples with cinnamon ... :)
