Caramelized Onion Lentil Bake with Balsamic Glaze

Ingredients:
1 cup small brown lentils, rinsed
2 1/2 cups water
1/2 teaspoon salt
1 tablespoon extra virgin olive oil
1 small onion, diced
1 large carrot, diced
1/4 teaspoon freshly cracked pepper
1 1/2 tablespoons organic soy sauce
3/4 cup quick cook oats
3/4 cup organic ground flax meal
1/2 cup whole wheat flour
3-4 large onions, caramelized
several tablespoons STAR Modena Creamy 
Balsamic Glaze, divided
fresh chopped parsley (for garnish)



Directions:
1. Preheat your oven to 350 degrees F.

2. Add the lentils, salt, and water to a medium sized sauce pan and bring to a boil. Lower the heat, cover, and simmer the lentils for about 30-45 minutes- until tender. Drain off any remaining water.

3. Sauté the onion and carrot in the olive oil for about 5-8 minutes until both are tender.

4. Add the sautéed carrots and onions to a large bowl along with the lentils, oats, flour, and flax seed, pepper, soy sauce, and 2 tablespoons balsamic glaze. Stir until well combined.

5. Grease an 11x7 inch glass baking dish and add the lentil mixture, smoothing out on top.

6. Bake for 30 minutes. Remove the casserole from the oven and cover with the caramelized onions. Drizzle the STAR Balsamic Glaze over the top. Top with fresh chopped parsley.

This dish was perfect served with a side of roasted potatoes and a fresh salad.
