Bean Burritos with Avocado Brown Rice

I found this delicious looking recipe on Pinterest for Creamy Avocado Rice from
Bran Appetit. (Beautiful blog and photos, go check it out!) The rice was amazing. I decided to kick it up a bit by adding some minced jalapeño, a little diced white onion, and a minced clove of garlic. Essentially what I ended up with was guacamole stirred into brown rice, but who cares! It was amazing. I could have sat down with a bowl of it and a spoon and been quite content.

However, setting all greediness aside (and my spoon) I needed to feed the rest of my family so I chose to add it in as a main course to some burritos with refried beans and pepper jack cheese. Because of the excessive heat we've been having this summer I decided to wrap them up in foil and warm them up on the grill. Served with a side of corn on the cob- it made for an delicious quick and easy summertime meal.


Bean Burritos with Avocado Brown Rice 
((Printable Recipe))

Directions:
6 'burrito size' tortillas
2 cups pepper jack cheese, grated
2 cups refried beans (canned or homemade)
2 cups brown rice (prepared according to package directions)
1 avocado, mashed
1/4 cup fresh cilantro, minced
1/4 cup minced white onion
juice of 1 lime
1 teaspoon salt
1 clove garlic, minced
1/2-1 jalapeño, minced

Directions:
1. Stir together the brown rice, avocado, cilantro, onion, lime, salt, garlic, and jalapeño. Adjust for seasoning.

2. Warm a tortilla up on a large skillet to soften it. Add some avocado rice, refried beans, and shredded cheese.

3. Wrap up the burrito and roll in foil. Eat as is or warm up in the oven or on the grill.
