Edamame and Quinoa Lettuce Wraps with Soy Garlic Chili Sauce

These lettuce wraps are fresh and light yet very satisfying. Filled with quinoa, edamame, red pepper and shredded carrots, these delicious lettuce wraps then get drizzled with a wonderful soy garlic chili sauce.  If your kids are anything like mine, they just love food they can "fill and wrap" themselves.
