Browned Butter Strawberry Banana Walnut Bread

The kids and I went strawberry picking. Twelve and a half pounds picked and four batches of jam later we still have a few strawberries begging to be baked.

I think the strawberries were quite happy with their fate.

I know we were.

*If you don't have a cast iron skillet, simply line some muffin tins and bake at the same time and temperature as below.


Browned Butter Strawberry Banana Walnut Bread

1 cup flour (I used whole wheat)
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup buttermilk
1/2 cup brown sugar
1/4 cup browned butter
1/2 teaspoon vanilla
1 egg, lightly beaten
1 or 2 very ripe bananas, mashed
1/2 cup finely diced strawberries 
2 or 3 strawberries, thinly sliced for topping
1/2 cup chopped walnuts (optional)

Preheat your oven, along with a 10-inch cast iron skillet, to 350F.

In a small sauce pan (not nonstick) melt the butter, stirring, until the butter begins to brown lightly and little brown bits form on the bottom of the pan. Pour into a small bowl to stop the butter from cooking or it will burn very quickly.

In a medium sized bowl whisk together the flour, baking soda, salt and cinnamon.

In a separate bowl, mash the banana.  Add the brown sugar, egg and buttermilk. Add this mixture into your dry ingredients, along with the butter, and stir just until incorporated.  

Fold in the diced strawberries and walnuts.  


Melt 1 tablespoon of butter in the cast iron skillet.  When melted, pour in the batter.  Top with the sliced strawberries. 


Bake for about 25 minutes.
