Corn, Edamame, Black Bean Salad

Hands down, this is probably one of my favorite summer-time (or anytime) salads...

Corn, Edamame, Black Bean Salad

2 ears of corn, cooked, with the kernels removed
1 package frozen shelled edamame, cooked according to package directions
1 cup black beans, rinsed and drained
1-2 roasted red peppers, diced
1/2 a small red onion, diced
1/4 cup cilantro, minced
3 tablespoons extra virgin olive oil
1 tablespoon vinegar
1 teaspoon salt
1/2 teaspoon pepper
pinch of cayenne
1/2 cup dried cranberries

Cook the edamame according to the package directions.  Drain them and run them under cold water to stop them from cooking. Place them in a large bowl along with the corn, black beans, roasted red peppers, red onion and cilantro.

Add the dressing ingredients and toss.  Chill until ready to serve. Add the dried cranberries right before serving.

Simple. Quick. Easy. Delicious.

  1. You know, I have recently just started eating edamame and I've become a big fan of it. I'm really trying to get the rest of the family on board with it but it is taking time. Also, I noticed you had dried cranberries on there twice. I think cranberries are a pretty neat twist on this salad!

  2. Thanks for catching that Brandie! My kids love eating Edamame whole, in their pod. Sprinkle them with a little bit of sea salt and drag the pod through your teeth so the beans pop out. It makes a great healthy snack! I like to under cook mine too so they stay a little firm. My kids prefer them that way too.
