Homemade Whole Grain Crackers

Forget the Triscuits.


Move over Wheat Thins. 


Welcome Homemade and Whole Grain...


Homemade Whole Grain Crackers:

1 1/2 cups old fashioned rolled oats
1 cup whole wheat flour
1/2 cup wheat germ
2 tablespoons ground flax seed
1 1/2 tablespoons sugar
1/2 teaspoon kosher salt
6 tablespoons oil (I use a combination of extra virgin olive oil and vegetable oil)
1/2 cup water

Combine dry ingredients in a food processor. Turn on the food processor for about 20 seconds to mix all the ingredients.  Leave the processor on and drizzle in the oil and water. Continue mixing until well combined.

Divide between two large cookie sheets, place a piece of waxed paper on top and roll until thin.

Sprinkle with kosher salt, additional wheat germ and any of the following: garlic powder, sesame seeds, poppy seeds, cracked pepper, or dried onion.

Cover with waxed paper again and give one more roll, lightly with the rolling pin.

Cut into squares with a pizza wheel and bake at 350F for about 20 minutes. Remove any done crackers and place the center crackers in for another minute or so. Cool on the sheet pan on top of a cooling rack.


Store in an air tight container.

  8. Hi, there. I tried to make your yummy looking crackers today and they were a flop. Has anyone else had a hard time with these. The dough was very dry - I did add a bit more water, but I'm not sure what else to add. Thanks. Joyce

  9. Joyce- I'm sorry to hear these didn't turn out for you. I make them every other week (and have had the recipe for over 15 years) and have never had a problem. I double-checked and everything written above is correct. I'm trying to think what might have gone wrong for you.... did you add the correct amount of oil? A 1/2 cup of water is usually enough but depending on the weather I add a few extra teaspoons of water until the dough sticks together when I pinch it between my fingers. Make sure you scrape your food processor well- sometimes the wet dough will hide at the bottom of the food processor. Then I just roll it firmly with a rolling pin under waxed paper and they turn out great.

  11. You bet Joyce! I know there is nothing more frustrating than a recipe that doesn't work! I've been there many times before. I felt so bad I went ahead and made the crackers after you posted this- just to make sure. I only needed the 1/2 cup of water. It formed a nice sticky dough that I was able to form into a ball in my hands. The other thought I had was that perhaps you used 6 teaspoons of oil instead of 6 tablespoons. I also added the oil and water in together at the same time. Perhaps that will help. Have a great day! :)

  12. They look so amazing that I will try them again. It was not a dough at all, it was very crumby and would hardly roll out. I could not even cut them before I baked them. I must not have added enough liquid. Thanks, again!!! :)

  19. Just made these this morning. They don't have that familiar crisp of wheat thins; but then I didn't think they would because of all the wonderful fresh ingredients and I wasn't able to roll them out thin enough. Hopefully, I'll get better and rolling them out to a thinner cracker. They tasted good all by themselves but then I dipped into some spinach dip and WOW! Will definitely make again. Thanks for the recipe and instructions!
