Dark Chocolate Brownies with Sea Salt

Homemade brownies are almost as easy as opening up a box mix. If you can stir together some sugar, flour, salt, cocoa powder, and baking soda- there's your boxed mix. It costs so much less, tastes so much better, and has no preservatives or ingredients you can't pronounce. Plus, you gain bragging rights of saying they are "from scratch".


Dark Chocolate Brownies with Sea Salt

Ingredients:
1/2 cup unsalted butter
1/4-1/2 cup dark chocolate chips
1 cup sugar
2 eggs, room temperature
1 teaspoon vanilla
1/3 cup dark cocoa powder
1/2 cup flour
1/2 teaspoon coarse sea salt (divided)
1/4 teaspoon baking powder

Directions:
1. Preheat your oven to 350 degrees.  Grease a 11x7-inch baking dish.

2. In a medium sized mixing bowl, stir together the cocoa powder, flour, 1/4 teaspoon sea salt and baking powder with a whisk.

3. Melt the butter and add to a large mixing bowl. Add the chocolate chips and stir with a whisk until they begin to melt.  Add the sugar and whisk until combined.  Add the vanilla and whisk in the eggs, one at a time. Stir in the dry ingredients.

4. Pour the batter into your prepared pan. Top with the additional 1/4 teaspoon sea salt and bake for 20-25 minutes. Remove them from the oven when the center is still slightly underdone and allow them to cool completely on a cooling rack.

5. Top with more coarse sea salt when ready to serve.

Chocolate Peanut Butter Butterfinger Brownies

There is decadent and then there is over-the-top decadent.  These would fall under the category of over-the-top.  (But, not in a bad way.)

My husband said that if Ben & Jerry's made brownies, these would be them.  I remember watching a show once about B&J and how they cut their tubs of ice cream in half to make sure that the chunky ingredients were evenly distributed throughout the whole carton of ice cream.

These brownies are PACKED with Butterfingers.  Trust me, every bite is loaded with them.



Chocolate Peanut Butter Butterfinger Brownies

Ingredients:
4 ounces unsweetened chocolate
1/2 cup room temperature unsalted butter
1/2 cup creamy peanut butter
2 cups light brown sugar
4 large eggs
2 teaspoons vanilla extract
1 cup flour
a pinch of salt
16 "snack sized" Butterfinger candy bars, roughly chopped

Directions:
1. Preheat the oven to 325 degrees F and line a 13x9 inch pan with greased foil.

2. Melt the chocolate and set aside to cool slightly.

3. In a large bowl, beat together the butter, peanut butter, vanilla, and brown sugar.  Add the chocolate and mix.  Next add the eggs, beating well after each addition.  Mix in the flour, pinch of salt and stir in all but 3/4 of a cup of Butterfinger to reserve as topping.

4. Pour into the prepared pan and top with the reserved Butterfingers.

5. Bake for 25 to 35 minutes and allow to cool completely.

(Do not attempt to cut these bars until they have been well chilled in the refrigerator.)



Oh yes, they are THAT good.
