Peanut Butter Oatmeal Sandwich Cookies


My husband's roommate from college messaged me the other day saying  he was going to be in town and asked if he and his daughter could stop by and hang out for a little while. I said, "Sure!" (He's fun to hang out with and there's nothing like getting your house speed cleaned for unexpected company.)


His daughter and my girls were getting along well, so he left for a quick meeting while the girls hung out and baked peanut butter cookies together. While the oven was hot and my kitchen was a mess, I decided to go ahead and bake these peanut butter sandwich cookies I had seen earlier in the morning on Pinterest.


When our guest came back from his meeting, he said he was willing to hang around a little longer to taste test these cookies I was working on. He loved them. And as he told me, he's not one to give out fake compliments. Now, I haven't had a Nutter Butters cookie since I was probably five years old, but he says these cookies taste exactly like them. I'll take his word for it and trust that is a good thing.



Peanut Butter Oatmeal Sandwich Cookies

Ingredients:
1 1/2 cups oats
1/2 cup flour
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup peanut butter
1/2 cup unsalted butter, room temperature
1 egg

Filling:
1/2 cup powdered sugar
1 cup creamy peanut butter

Directions:
1. Preheat your oven to 350 degrees F.

2. In a mixing bowl, beat together the 1/2 cup butter, 1/2 cup granulated sugar and brown sugar. Beat until fluffy. Beat in the peanut butter and then the egg. Add the vanilla.

3. Meanwhile, in a small bowl, whisk together the baking powder, baking soda, salt, and flour. Add this mixture to the butter mixture. Beat together until incorporated. Stir in the oats.

4. With a small cookies scoop, make cookie balls and place on a parchment lined sheet pan, allowing a little room for spreading. Press the cookies down slightly with your fingers. Bake for 8 minutes and allow the cookies to cool on the cookie sheet before transferring to a cooling rack.

5. Beat together the filling ingredients until light and fluffy. Use this filling to sandwich between two peanut butter cookies.
